The themes are built on WordPress 6.0 or newer and PHP 7.4 or newer, and they run on the native block editor. There is no required page-builder plugin, no bundled subscription and no licence server to call home. Each theme exposes its own controls in the WordPress Customizer — colours, typography, header and footer layout, and a dark mode variant — and each one includes demo content you can import to see the intended layout before you write a word.

No. Installing a theme, importing the demo content and swapping the text and images is all done from the WordPress admin. Code only comes into it if you want to change the theme's source, which the licence allows on your own and client sites.
Themes and plugins are separate in WordPress; a plugin update cannot overwrite a theme. Update the theme itself from the download you were given.
